I really adore meatloaf. It’s meaty, ketchupy, sweet, savory, tender, and I could go on and on about all the things meatloaf is and can be when made properly.
For the last few years, my latest obsession has been meatloaf cupcakes. What are those, you ask?! Well, they are my beloved meatloaf in perfect bite sized portions that I usually top with a healthy dollop of creamy mashed potatoes.
Hubby decided he wanted Mac and cheese with the meatloaf instead of the tried and true mashed potatoes accompaniment. Being the wonderful wife I am, I happily obliged! You see, hubby always hated Mac and cheese but I guess not letting his bad judgment affect my love for a wonderful cheesy meal helped him come to love it as well.
To make this incredible weeknight goodness that comes together in less than an hour (less than 45 minutes if you’re really efficient), you will need:
For meatloaf: Serves 2
0.5 lb/ 8 oz ground beef (you could go half beef, half pork if you wanna make it even better)
2 T milk
1 T Italian seasonings
1/8 tsp fine sea salt
1/8 tsp black pepper
1/2 T worcestershire sauce (dare you to say that 3 times fast!)
2 T breadcrumbs
Ketchup ( you could mix ketchup and barbecue sauce)
Olive oil for lining the cupcake pan
Preheat oven to 385 degrees.
Combine meat, salt, egg, Italian seasonings, Worcestershire sauce, breadcrumbs, and black pepper until thoroughly mixed.
Add milk and it should feel softer and more malleable.
Form tennis sized balls and place in the greased cupcake pan (keep in mind they will shrink slightly while cooking).
Brush some ketchup over the top of each meatloaf.
Bake for 35 minutes.
For Mac & Cheese:
1/2 cup macaroni
1 T flour
1/2 tsp salt
1/2 cup milk
2 T butter
3/4 cup cheddar cheese
2 T breadcrumbs
While the meatloafs are a-cooking, cook the macaroni to al dente (about 7 minutes).
Meanwhile, melt the butter over low heat.
Which in the flour and salt until combined and has no lumps.
Stir in the milk and continue stirring until it’s thick(looks and has the texture of a very thick gravy).
Stir in the cheese until fully incorporated and melted.
Drain macaroni and mix in 1/3 of the cheese mixture
Spoon the Mac and cheese into ramekins. Spoon some cheese mixture over the top and sprinkle breadcrumbs over that.
Place in the oven with the meatloaf for 10 minutes.
Serve the meatloaf with additional ketchup on top with the Mac and cheese.
