Happy Mother’s Day!!!!
So….I have been gone for a VERY long time! I apologize for the long leave of absence but I have a very good reason….I had a baby! So, it is my first mother’s day and I am very excited. However, pregnancy was a very rough time for me, I had severe hyperemesis, so, I could barely get out of bed in the morning and food was my worst enemy at that time. BUT…I’m baaaacccckkkkkk!
Let’s get right to it!
If you’ve ever been to Bonefish Grill on a Sunday, you know they have an amazing brunch menu with unlimited mimosas, can you say YUUMMMMMMMMMM???
Today, for mother’s day, I decided to treat my wonderful husband for helping give me the greatest gift, our beautiful baby boy. Since he is a creature of habit, he prefers crepes for brunch, but I decided to take it up a notch and try my hand at Crème brûlée french toast. As you know, Crème brûlée is my favorite dessert, so when given the opportunity to enjoy it in french toast form, how could I possibly resist?!
To get to this perfect union of bread and uncooked custard, I tried multiple ways after doing some research. Most sites said to soak the bread overnight then bake, I tried this, and I ended up with toast that was delicious but soggy, especially in the center. So, back to the drawing board. I decided to try the regular way Crème brûlée is made, heat cream, add egg yolks, then bake, it was delicious, set very nicely but was still a little too soft for my liking and used a lot of eggs. So, I decided to cut out the cooking part and do it the way a regular french toast is made with some slight changes, et voilà!
So, here is the recipe
Crème Brûlée French Toast (Serves 3):
– 6 thick diagonal slices of French Bread
– 3/4 cup of heavy cream
– 1/4 cup of whole milk
– 1 tablespoon of sugar
– 0.5 teaspoon of vanilla
– 0.5 teaspoon of caramel flavoring(optional)
– 2 eggs
To caramelize the toast:
– 1/4 cup of sugar
– 1 tablespoon of butter
Combine all the ingredients in a bowl
Drizzle and coat the french toast on both sides
You can either broil in your oven or use a torch (my favorite tool ever!)
If you choose to broil in your oven, turn your broiler on high, place the cookie sheet in the oven and let the sugar melt (~ 1-3 minutes).
To make the delicious whipped cream, you will need the following:
– 1/2 cup of Heavy Cream
– 1 tablespoon of sugar
– 1/3 cup of Mascarpone
Combine all items in a bowl and whip on high using a hand mixer until stiff.
– Melt dehydrated raspberries in a microwave in 30 second bursts
– Place 1/3 cup of raspberries and 1 tablespoon of sugar in a bowl at room temperature for 30 minutes – 1 hour. The sugar will dissolve and form a syrup.
